Tomorrow my daughter has pogaca (some kind of empanada) in her school menu. Now here’s my calculation, one classic empanada has lots of carbs inside. I should also take into account the fruit and the drink they will give her. So this means every Tuesday I need to inject her a giant amount of insülin and then to be expected to go home. What am I doing instead ? I am applying the small amount of carbs – small amount of insulin rule at school as well.
Nearly all schools force unhealthy, high in carbs and fast food menus to small children. I cannot change the system but that does not mean I can’t fight it.
I have already told you how much fathead bread makes my life easier, since the dough is so very handy, it also comes in handy. I can make pide, pizza, sandwich and..empanada.
Here it is, a very healthy and tasty alternative who only has 3gr carbs per serving. Enjoy.
*To those who say they do not have the time: This took me like 10 minute to prepare and 15 minutes to bake.
Ingredients:
For the dough
1 egg
1 1/2 cup dil or mozzarella cheese
3/4 cup raw almond meal
1/8 tspn baking soda
1/2 tspn apple vinegar
2 tblspns butter (melted)
For the filling
2 tblspns white feta cheese
Parsley or dill weed if desired
For the topping
Sesame seeds
Instructions:
Grind the raw almonds and add egg, vinegar and baking soda on top. Add the butter. Melt the cheese with bain marie method (Sit over a pan of barely simmering water and allow the cheese to melt, stirring occasionally.)
Add the melted cheese on top of alond meal, egg and butter and stir with a wet spoon. You will end up with a dough that slightly sticks to your hand. Split the dough to four pieces. Roll them into circles on a greased surface, place 1/2 tblspn filling inside and close. Place on a parchment paper placed baking sheet. Sprinkle sesame seeds on top. Bake for 15 minutes in a pre-heated 150 C oven.
***16/12/2015 UPDATE: There is a much easier way than bain marie method. Melting the cheese along with butter in a non stick pan, on very low heat. When the cheese melts, simply transfer it to a deep bowl and add the egg (which must be on room temperature) and the other ingredients. Than stir very quickly all together as if you are beating it. The dough will be ready in a few minutes.
