The traditional Yogurt soup is always made with flour as thickening agent.
Those who haven’t tried will now ask themselves whether you can make this soup without any flour, well you can. I admit, this is not a thick soup, but it also is not watery. The egg yolk does a good job with thickening. Also, as someone with frequent stomach issues, I can assure you this soup is very light and comforting.
Flourless Yogurt & Meatball Soup

Serves : 4 servings
Ingredients:
For the soup
1 lt drinking water
1 cup yogurt
1 egg yolk
1 tspn rock salt
1 cup boiled chickpeas or green lentils (optional)
For the meatballs
150 gr ground meat
1 small onion
¼ tspn ground black pepper
½ tspn rock salt
Topping
Butter
Dried mint leaves
Instructions:
1-Pour drinking water in a medium sized pan and let it boil in medium heat.
2-Grate the onion, squeeze its water with your hands. Knead it in a deep bowl along with ground meat, egg yolk, salt and pepper. Tear small pieces from the dough and make small balls between your palms by wetting your hands.
3-Mix yogurt, the other egg yolk and salt. Add inside ½ cup cold water and one scoop of boiling water. Keep mixing. Add this mixture inside the boiling water, turn off the heat and keep mixing for a few minutes.
4-Add chickpeas/lentils when the mixture become homogeneous. Cook for 20 min in medium heat.
5-Melt the butter in a saucepan, add mint leaves and remove from heat when the mixture starts to bubble. Pour it on top of the soup. Serve hot.
